Pu Luong cuisine


Pu Luong cuisine - A rustic gift of the northwestern mountains of Pu Luong not only preserves the "soul" of the old forest but also a place to live and preserve the cultural beauties of the Thai community of Thanh. Like the highlands of the Northwest, Pu Luong has many unique delicacies such as: Co Lung duck, lam rice, forest bamboo shoots, hill chicken, corn wine, etc. Simple "homegrown", wild vegetables growing from the sun and wind in the highlands have been cleverly combined, creating dishes that are rustic but full of flavor.

Coming to Pu Luong, you can freely drop your soul floating with the clouds or wander to discover the beauty of the wild mountains, but do not forget to enjoy the super unique, super strange and super delicious dishes here. In every season, Thai people treat guests with products that are generously and freely given by the wild and unspoiled Northwest land such as stream fish, bitter bamboo shoots, sweet bamboo shoots, gong cabbage...
The most famous of the Pu Luong area is Lam rice with grilled meat. Lam rice is made from fresh, fragrant and flexible rice cooked in a bamboo tube. Bacon is only taken from wild pigs, sliced to taste, marinated with spices, then wrapped with grapefruit leaves outside, clamped on a bamboo stick grilled over charcoal. Under the heat of coal, the meat is golden, giving off an extremely attractive aroma. Enjoying lam rice served with grilled meat, sesame salt, you not only feel the fragrant plasticity of the new upland rice, but also the cool taste of forest bamboo, because of the sweetness of the spring water...  All make up one taste. very special for Pu Luong lam rice.
 
Another dish that must be enjoyed when coming to Pu Luong is Co Lung duck (often called stream duck). This is a typical duck breed of Co Lung commune, Ba Thuoc district, Thanh Hoa province. The attraction of this duck breed is small bones, firm, lean and soft meat. Ducks here are raised on streams, naturally foraging in water flowing from rocky mountains, so the meat has a delicious taste, each fiber is soft and sweet on the tip of the tongue. Therefore, Co Lung duck is also called "Tien King" duck, enough to see the rarity and deliciousness of this dish.

Due to its proximity to an abundant source of aquatic products, namely the Da River and tributary rivers and streams, river fish and stream fish are the main food of the people here. Fish products are processed by Thai people into many different dishes:  steamed fish in a wooden pot, Thai people call it cod; "pa-Giang" is smoked fish, Pa pinh top (grilled stream fish turned upside down) is a traditional dish, highly respected in the Thai community.
 
 

The dish "Pingtop" is also called grilled fish, but usually made of big fish such as: carp, driftwood, carp... but it is characterized by dissecting the back, draining, and rubbing a layer of roasted salt; Marinate grilled fresh chili peppers, crush the mac Khen, let the  fish absorb the spices, harden the meat, and then put it on embers. Grilled fish is extremely attractive because the aroma of the fish blends with the spicy taste of chili, the passionate taste of Mac Khen, making your taste buds sublimate.
A strange but addictive dish for diners is Pu Luong bitter bamboo shoots. Bitter bamboo shoots are grown in many highlands in the Northwest. According to the experience of the ethnic minorities here, bitter bamboo shoots can be harvested all year round, but most in the rainy season, the sweetest bamboo shoots will always taste sweeter at the  beginning of the season.
 
Bitter bamboo shoots are processed into many different dishes such as chili pickling, stir-fried bamboo shoots, but the most delicious is the bitter bamboo shoots with salt mixed with mac Khen seeds. Bamboo shoots at first have a bitter taste, it will be a bit difficult for those at first to eat, but the longer you chew, the more you will feel the sweet taste of bamboo shoots. Along with that, bitter bamboo shoots are a very good medicinal herb for health, so people are very fond of the bitter taste.
 

Besides the food, Pu Luong also has spicy can wine, full of love from the Thanh people.  Wine is considered "original" using homemade yeast from leaves, bark, and roots of medicinal plants brewed with glutinous rice, glutinous rice and spring water. To have a good wine, not only requires aging time, but depending on the region, there will be separate secrets in choosing leaves and brewing methods so that the wine has aroma, spiciness, sweetness and richness. Perhaps that is why Pu Luong wine always has a very unique taste, not mixed with any other wine.
